A Father’s Day Brunch

What a great day to have brunch in honor of dads?  That is exactly what I did today with three of our closest friends.  I made cheese buttermilk biscuits, hash browns, scrambled eggs, bacon, sausage, blueberry scones and a sausage and hash brown quiche (see recipe below).  It was my first time making this dish and it was wonderful.  It is pretty time consuming to make the hash browns as I make everything from scratch.  I had to peel, and slice the potatoes for hash browns; then, I cooked them before layering the hash browns in my casserole dish for the quiche.  After that is done, it is only a matter of following the recipe.  Try it!  You will like it.  It is a great meal for dinner.  You will only have to add a side salad to make the meal complete.  This is a highly fattening dish.  You can replace the breakfast sausage with a turkey sausage and use a low fat cheese.  When making your hash browns, make sure you keep an eye on the amount of oil you use.  The more oil you use, the more fattening the dish becomes.  Of course, you will be using the “good” oil: canola or olive oil.  🙂
