My Black Bean Soup Recipe

I made this wonderful black bean soup.  Pretty simple.

3 cans of black beans (rinsed)
garlic
roasted red and yellow peppers
olive oil
salt and pepper (to taste)

The above ingredients was what was in my refrigerator.

I sautéed the garlic and roasted peppers with olive oil on medium heat.  After about a minute, I added salt and pepper.  Then, I added the black beans.  Stirred the mixture in the pan.  Added 1 1/2 cups of filtered water to the pan.  I let it come to a boil then cooked it over medium heat for about twenty minutes.  Once done, I used my submersion blender to mashed the beans and vegetables.  After about two minutes, the mixture was quite thick and beautiful.  I added some homemade salsa (black beans, tomatoes, garlic, onions, corn, cilantro, salt and pepper) to the soup.  Delicious!

Now…I didn’t provide measurements because I am the kind of home cook that adds “a little bit of this and little bit of that” to her recipes.  This is to say…add to your own taste.  Feel free to add additional items to the soup (or subtract if you like).  Make it yours and it will taste great.
