Not So Great Waffles–Looking For Suggestions

Yesterday I had planned to make great waffles. I used the recipe from Alton Brown of the Foodnetwork’s Good Eats .  It didn’t come out as well as I would like.  I used Trader Joe’s White Whole Wheat flour instead of 1 cup of white all purpose and 1 cup of whole wheat flour as prescribed by Alton. Outside of that, I used all the ingredients.  I thought it tasted good but my family didn’t think it was fluffy enough.  They are looking for light, less densed waffles.   Every since we went on our family vacation this summer to North Carolina and stayed at a hotel that offered “great” waffles, I’ve been in competition with it.  The waffles that were offered at the hotel were prepackaged.  Since I have tried to not purchased packaged food items, I have had a tough time trying to replicate the fluffy waffles.  Do you have any suggestions?  Do you have a recipe that I can use that will satisfy my family?  Let me know.  In the meantime, I’ll keep looking for a waffle recipe.
